Hello Beautiful People!

Weekend Success. It was a weekend old me would have dreaded but I am happy to report that I loved every relaxed and unplanned moment. I was guided this weekend by Daniel Vitalis’s philosophy of ‘rewilding’ myself: I picked berries, I walked outside, I didn’t wear shoes on the grass, I woke up when my body told me it was ready. Basically, I spent lots of time outside and no time in front of a screen. Here’s the play-by-play:

Friday: Yikes, I was ready for the weekend…after not taking last weekend off, I was really feeling it! Anyway, to wake myself up, I biked for thirty minutes, followed by ten minutes of deep stretching…It was heavenly. After that, I headed to a friend’s BBQ and brought a new Compost Cook concoction, Valeo Macaroons (Vegan+Paleo). Now for the recipe:

VALEO MACAROONS
2 tbs flax seeds, ground
6 tbs almond milk
1/2 tsp vanilla
1/3 cup maple syrup
4 tbs coconut flour
pinch of salt
2 1/2 cups unsweetened shredded coconut
DIRECTIONS: Preheat oven to 300F. Combine flax and almond milk, then let rest for 10 minutes, until it becomes like a paste. Next, add the remainder of the ingredients to the paste and mix until it is completely combined. Next, line a cookie sheet with parchment paper and scoop the batter on┬áthe sheet so that they are 1″ apart and about 1 tbs size. Bake in oven for 25-30 minutes, or until golden brown. Enjoy!

Saturday, I slept in until 11:15 !!!! This was apparently needed and totally blissful. Once I woke up, I did 30 minutes of Barre, followed by watering the garden, making a mean smoothie, then heading downtown to complete errands that I had been avoiding. While completing the errands, I drank THREE David’s Ice Teas. SO. GOOD. Cherry Snocone, Midnight Dream and The Spice is Right...The Spice is Right was my favourite. After guzzling my weight in tea, I headed over to my sister’s apartment for a late lunch of baked chicken and kale salad. Delicious. After that it was time for me to accompany my sister and her boyfriend couch shopping. Oy vey. Who knew that buying a couch was such an event?! Apparently it is…there is durability tests to compare, palettes to consider, fabric texture and of course, comfort. The complexity and seriousness of couch shopping was hilarious. After that, I went blackberry picking for over an hour, followed by a dinner, a movie, a later dinner and then SLEEP!

Sunday morning, it was time for BOOTCAMP!!! I am LOVING getting back into shape…this class leaves me DRIPPING sweat, but I do it with one of my best friends so it’s really fun too. This week, we headed to my favourite raw restaurant in town for Almond Milk Matcha Lattes with Raw Honey. So good. After that, I went home to shower and for a more substantial breakfast:

ALMOND CHOCOLATE SMOOTHIE
5 almonds
1 tbs flax seeds
1/2 banana
1 scoop vegan chocolate protein
1/2 cup almond milk
1/2 cup water
4 large ice cubes
1/2 tsp vanilla
Sprinkle of salt
Directions: Blend until SMOOTH!

After that, it was time for a bit of packing for Seattle then soccer!! Yikes, I am so not a soccer player, but it was fun and sweaty to play in the hot sun. After sweaty soccer, I did some work at a cafe, went grocery shopping then feasted:)

    Sounds like a pretty great weekend! Those macaroons… yum!! I did some baking & just enjoyed some chill time with my husband this weekend… always relaxing & marvelous! :)
